Back-to-School Breakfast Ideas

By now most children are back in school, and most moms have resorted to cold cereal for breakfast.

After all, who has time for breakfast when there is homework to check, lunches to pack, papers to sign and shoes to be found.  Because, don't you know, there is a shoe thief that sneaks into most of our homes in the night and mischievously hides only one of every pair of shoes.  Sometimes it even takes a pair of shoes, and then for some reason puts them at a friend's house.

Sigh ...

We are still looking for Dylan's Nikes and I'm sure that's what happened.

For moms who work outside the home, the morning challenge is doubled or tripled in intensity.  It can be nuts, and breakfast is haphazard at best.

Today I'd like to offer some suggestions for making breakfast easy, organized and healthy.  It will take a few minutes making a list of breakfast options, a grocery list for the store and only minutes to prepare, I promise.

I'd make breakfast if I had any good ideas.  And I never seem to have brilliant ideas in the morning when craziness is ensuing.  So I've started a list of ideas for breakfast. All of these are made with fresh ingredients, unless noted.  Here are some of them:

Egg, ham & cheese bagel sandwich
Sausage biscuits  (tube of pre-made biscuits & sausage patties)
Yogurt and fruit parfait w/ granola  (layered is pretty)
Scrambled eggs w/ bacon cut up in it.   (cut bacon into small pieces and fry first)
Deviled eggs
Frozen waffles & sausage
Bagels & cream cheese (use plain bagels w/ flavored cheese for variety)
Chorizo & egg burrito  
Egg scramble (use leftover ingredients such as potatoes, onions, peppers)
Cheese Omelet   (w/ meat if available)
Chocolate chip pancakes
Muffins made from a box mix
Banana bread (made the night before)
Oatmeal or hot multi-grain cereal with raisins or fruit

This is just a start.  Create your own master list, and post it on your fridge or inside a cabinet.  Then create a menu for the week, use that menu to make a shopping list, and you are set for the week.

Of course, even with the best intentions, some mornings you just have to have Lucky Charms.

  1. My girls are ever changing in what they like for breakfast. Right now my oldest two like muffins for breakfast, while my youngest likes to have apple slices dipped in peanut butter.
