My Monday Menu

My favorite grocery store has some awesome sales this week on beef chuck steak and 93% lean ground beef.  With fall in the air, I'm pulling out my crock pot for some meals this week.  It's actually still in the 100s here, but a girl can dream. 

I've also discovered a new recipe site in an unusual place:  Jackson Electric of Jackson, Georgia.  Those southern ladies know how to cook!

Meal 1:  
Tender Parmesan Baked Chicken   (recipe from Jackson Electric)
The Lady's Cheesy Mac  (you gotta try this from Paula Deen at Foodnetwork)
Green beans

Meal 2:
Beef chili 
Jiffy Cornbread (for enhanced flavor add 1/2 can creamed corn, 1/4 cup sour cream and 1/2 cup shredded cheese added before baking)
Cole slaw w/ apples & raisins

Meal 3:
Baked salmon (or other fish)
Simple rice pilaf   (Saute 1/4 cup diced onions, 8 oz sliced mushrooms in 2 Tbsp. butter.  Add 1 cup rice & 2 cups chicken broth.  Cook as usual.)
Green vegetable

Meal 4:
Pasta e Fagioli soup  (recipe from copykat.com)
Fruit salad

Meal 5:
Shredded beef tacos   (recipe from gimmesomeoven.com)
Spanish Rice
Lettuce & tomato garnish

Meal 6:
Chicken Breasts w/ Garlic & Balsamic Vinegar
Oven-roasted potatoes
Broccoli

  1. I'm trying to get better with organization on all levels. The one I'm trying to work on the most right now is planning meals.
    I follow your other blog, but forget about this one because we can't subscribe to receive it in our email (at least that I can see). I sometimes suffer from "out of site, out of mind" syndrome. :) I hope to try to remember to check this site more often because you have some great tips!

    Great ideas and great menu. I'm terrible about meal planning. Every evening I pray that Jesus will perform a miracle and put a delicious, nutritious dinner on my table!
    Thanks to your suggestion and my on-hand ingredients I'm going to try the mac and cheese tonight! And will look at the rest of the week too. Still praying, though. :-)

    My biggest struggle is with PAPER! I have been dubbed the Queen of Paper Piles and am often in danger of becoming lost between the stacks!
    How shall I be delivered????

    I've never had an efficient filing system for odds and ends, sale coupons, upcoming events, etc. For one who relishes being organized, I do a really pitiful job...so I'm ready to turn over a new leaf, uhmm, I mean throw out A LOT of stuff! LORD, have mercy.

  4. Oh I am just going to love your new site!! Menu planning is one of my least favorite things to do because I seem to draw a blank when it's time. But once I have a plan,I feel like such a happy homemaker!!

  5. Oh, I am so ready for some good soup weather! :) Thanks for some great meal ideas. Hmmmmm...I think I should have eaten breakfast before coming by here. My tummy is rumbling.

  6. My family so enjoyed your parmesan chicken recipe and the soup. I made the meatballs with spaghetti (with beef) and used them in the Olive Garden soup the next day. It was a hit. Thanks for making the cooking and planning easier for me. I am not a great cook, though I enjoy it and am challenged to cook delicious healthy food (my husband likes) with a small food budget.
